Is it better to shoot with gels against a gray backdrop vs a white backdrop?
I heard that the gray would display a more intense coloring than a white backdrop. What are your thoughts?
If that is true, then if I only have a white backdrop at the studio, how can I still make the color just as intense?

The Savage Infinity Solid Vinyl Background in Pure White supposedly will see improved color saturation with gels flash or rgb led lights. I've looked in to this but the expense keeps me from buy it.
You can achieve the same effect with white or grey, but grey will create a more saturated color easier. The white will be a lot more reflective, so you can achieve a nice color with a lower power on the light, but I personally like using grey. You can also use black and get a nice saturated color. This image was actually taken on a black v-flat but the power needed to be pretty high to get this effect. One benefit of using a darker background is that you can get more saturation in a smaller space because it will absorb the light and prevent too much kick back which might result in some color fringing around the edges of the hair.
